Prep Time: 10 minutes
* 1 tablespoon lemon juice * dash of salt and pepper * 1 cup canned chickpea beans, drained and rinsed * 1 tsp black olives * 1 cup chopped tomato * spinach leaves * 1 wrap
In medium bowl, combine lemon juice, salt, pepper, and beans. Mix well, mashing beans slightly with fork. Stir in remaining ingredients except spinach and wrap.
Place spinach in wrap, then top with filling. Roll up and serve immediately or wrap in plastic wrap and refrigerate up to 6 hours. If making one wrap at a time, keep remaining filler in an airtight container and refrigerate.
